It’s often to find a really nice recipe for cooking at a campsite that will make delicious food, but that takes a very long time. That is not what Campfire foods are about. A good recipe should be easy to make and delicious. We want to enjoy our time with our friends and family, not spend hours and hours over hot coals. The potato is a perfect starting point for this and these two recipes are easy, tasty, and quick.
Potatoes Seasoned, not Stirred
This recipe makes some delicious, seasoned potatoes. These can be added to any dinner or lunch, or even served with eggs for breakfast. They are simple to make, too. Just prepare them and have them on the coals as you cook other things.
You will need :
20 Baby Red Potatoes
Oil of your choice
1 Pack of dry dressing mix of your choice
Take your potatoes and wash them, dry them, and cut them into bite size pieces, usually just in half. Add them to a bowl or a ziplock bag and put enough oil to just cover the potatoes, usually two Tablespoons will do it. Shake the potatoes until they are evenly covered in oil. Then sprinkle the dressing mix in and give it another shake. Wrap these potatoes in tin foil and leave near the coals as you cook the rest of your meal until they are fork tender.
Carefree Baked Potato
If you look up Baked Potato recipes you will find some that have 12 steps and take four hours. A baked potato is a simple and tasty thing to add to any meal. You shouldn’t have to worry about it.
You will need :
Potato of your choice
A cleaned 15 ounce tin can
We will be cooking our potato in the tin can, so it is very important that it is cleaned out, that the label is removed, and that you trust the company that has made the can. Some cans will have funky chemicals in them, which is not good. Just buy from a popular, trusted company.
Butter up your potato and add your seasonings, salt and pepper work just fine. Then place the potato in the can and cover the top with tinfoil. Put the can in the coals for twenty minutes, then rotate a quarter turn and cook for another twenty. These potatoes will come evenly cooked and delicious, all the while you are preparing the rest of the meal or just hanging out.
