    I like the quesadilla idea, but it’s not necessary to use a Dutch oven. Just wrap the quesadillas with two layers of heavy-duty foil, and place them directly over the coals. I have used this method for decades to cook “hamburger a la foil.” I could send you the recipe if you are interested.
